Week 3

Failing miserably.

Today starts week 3. Today also is the start of the special k challenge, diet, whatever you want to call it. Obviously something I was doing was wrong. At the end of week one I was down half a pound. Today I am up a full pound from that. My current weight is 150.5, or .5 above my starting weight. Not a good sign for a diet.

My problem is lunch.

I can never decide what to buy for lunch. Whatever I buy, I don’t want. Then I get down town with either no lunch or a lunch I won’t eat. I end up either having a $1.05 cheeseburger and apple dippers from McDonalds or a grilled cheese from the caf both ringing in at under $3.00. The problem is, I can’t afford to drop more than three dollars on lunch. So I end up eating crap. I have to figure out a lunch. If I would find something I actually want to bring for lunch I would be perfectly happy and the diet wouldn’t be an issue. Over the summer I would have a caprese salad sandwich. This is a difficult fete to achieve in law school. My problem is that is the only sandwich I like, leftovers are too fatty for lunch and I always forget to cook the pasta for my pasta salad.

Special K will give me two weeks to come up with a better lunch plan. Cereal is easy to transport and I like it. So it works. I don’t have to worry. In the meanwhile, I think I will have to come to terms with the fact that although I am so sick of lean cuisines I can’t even look at them, I may have to start eating them for lunch again.  I have a feeling after two weeks I will feel the same about special K.  All the reviews say pretty much what I would expect. Hopefully this two weeks on special k will do two tricks:

1. Jump start this diet
2. Kill my hunger. I eat too much.

And away we go.

I have the same issues as you do. Today though, I brought an red onion,avocado and grilled chicken breast salad. Easy to transport and assemble.

Good Luck!!! It is hard but stay strong!!! Have you thought of wraps?!?! They are not that expensive at all!!!! You buy the stuff once a week and make them as you go. They can never go old. You can make turkey, ham, plain cheese, add lettuce or tomatoes, sometimes throw some chicken from Publix in them!!! Just an Idea!

mmm avacado and chicken salad sounds delish. Ill write it down. I am going to need to make a huge lunch of possibly yummy, not boring easy lunches. I suck at that. :-)

Wraps are good but I hate cold cuts... which lets them get boring fast.

Good luck with your challenge!! I can completely sympathize with not having a lot of time to make lunches during the week. A lot of times I cook up a big batch of lemon chicken and whole wheat couscous with parsley/garlic/s+p. It lasts well for a couple days and is great for lunch. Or maybe a healthy chili that you can make on Sunday and eat throughout the week. Let me know if you happen to want the recipe! Keep up the good work - stay strong! :) :)

Ohh healthy chili! That sounds yummy!

although the lemon chicken sounds yummy id probably want to flour it and saute it in olive oil. :-)

I seriously suggest you read In Defense of Food by Michael Pollan, if you haven't yet.

It literally changed the way I see food, as if I'm hypnotized, and I've lost 10 pounds now without really trying or working out, because I've upped the amount of greenery I get in my diet and have drastically reduced my portion sizes unconsciously.

I also recommend supplementing reading this book with watching Survivorman on Discovery. Amazing, haha.
